Chicken Pancit Sotanghon Guisado

Pancit Sotanghon Guisado is a filipino glass noodle recipe which is mix with chicken breast, cabbages, carrots, & string beans, and seasoned with soy sauce and oyster sauce.

Ingredients
  

  • 250 grams Vermicelli Noodle
  • 400 gram of breast chickens
  • 1 cup of julienne carrot
  • 1 cup of julienne string beans
  • 250 gram of chopped cabbages
  • 1 medium onion
  • 2 cloves garlic
  • 6 tablespoons of soy sauce
  • 4 tablespoons of oyster sauce
  • 2 tablespoon of vegetable oil
  • 3.5 cups water

Instructions
 

  • Add vegetable oil in a cooking pot. Once the oil is hot, add chopped onions and garlic. Stir for few minutes till it becomes soft and cooked
  • Add chopped chicken breast. Stir to mix for a minute and cover with the lid. Wait until the juice from chicken fully evaporate
  • Add soy sauce and oyster sauce. Give a quick stir.
  • Add julienne carrot and then stir for less than a minute.
  • Pour water in the pot. When it started to boil, add julienne string beans. Let it cook for 1 to 2 minutes
  • When the string beans look soft, add the noodle and stir to combine
  • Cover with the lid and then lower the heat to let it simmer for 5 minutes
  • Once the noodle is cooked, add chopped cabbages. Stir to mix.
  • Cover with the lid again, and let it cook for an additional 2 to 3 minutes before turning off the heat
  • Transfer on a plate and serve with calamansi or lemon. And you are done.

Notes

  • Do not soak the noodle in boiling water since this will make the noodle too soft and sticky
  • Instead of water, you can use chicken stock for stronger flavor of the sotanghon
