Add 1 tablespoon of olive oil in the pan. Wait till it become hot.
Once it is hot, add the onion. Stir it for few minutes or until it become light brown. Add the spinach and stir it again
Remove the cooked spinach from the pan, and put in the bowl. Add the beating egg, salt and black pepper in the bowl and mix it with the spinach.
Add the two tablespoon of olive oil in the pan in medium heat. When the oil is hot, add the spinach egg mixture. Let it cook it for 1 to 2 minutes. Fold the omelette into half using the spatula, and then flip it. Cook for another 1 to 2 minutes.
Remove the omelette from the pan, and serve it with toasted bread or any sides you desire.
