Regag Bread, an Emirati thin bread, is crafted with basic ingredients like flour, water, and salt, cooked on a hot griddle or flat pan to achieve a thin, crispy crepe-like texture, and traditionally adorned with toppings such as egg, cheese, or honey during cooking, making it a popular breakfast choice.

Instructions
Firstly, combine brown sugar and yeast with warm water in a small plate bowl.
Pour the yeast-water mixture into the flour. Mix gently until it forms a soft consistency. Make sure it's not watery or too dry. Cover it and leave it for 1 hour to grow.
Heat the pan in medium heat. When its already hot, take a portion of the dough and use either your hands or a dough scraper to spread it out.
Now, before adding the egg on top of the crepe, whisk the egg with salt and black pepper. Spread it around gently.
Next, spread it around with cheese. And then flip it to the opposite side and allow a few minutes to cook.
After that, fold it in half, and fold it again to make it into a triangular shape. Transfer it to the plate. Serve this regag bread with hot tea.
Notes
For dessert variation, you can use nutella or any chocolate sauce as a topping.
If the batter is too thick, add a bit more water; if it's too watery, add a little more flour.
