    Baked Chicken and Potatoes with Tomato Sauce

    Baked Chicken and Potatoes is a chicken recipe that is mixed with potatoes and tomato sauce. It is baked in the oven to have a brown crispy texture of the chicken.

    Baked Chicken and Potatoes with Tomato Sauce

    This dish is similar to the middle eastern recipe except I don't add many spices. It is simple to make and it tastes delicious. My mother made this oven chicken and potatoes and it is best to served with rice or pita bread.

    Every country has their version of chicken and potatoes in the oven and some of them uses spices, herbs, or just ingredients. In this post, I will be making my mother's version of Baked Oven Chicken and Potatoes with Tomato Sauce.

    Recipe Ingredient

    There are several ingredients I used to make this baked chicken dish. Firstly, I am using chicken legs since they are moist and tastier to eat.

    Secondly, I am using black pepper, salt, and onion for seasoning my chicken. You need a lot of onion for this dish since it makes the chicken flavorful.

    Thirdly, I am using potatoes as my starch. Making chicken dish will never be complete without potatoes. Fourthly, I am using tomato sauce or tomato paste since this will give a nice dark red color of my sauce.

    Lastly, I am using a lot olive oil for my dish. This will give a nice flavor and make the meat moist. To me, olive oil is really one of the most important ingredient in this recipe.

    What are the kitchen / cooking appliance you need when making this dish?

    When I cook my Baked Chicken and Potatoes with Tomato Sauce, there are two things I need. First, you need a baking pan where you will put the chicken and all ingredients. And second, you need an oven or conventional oven where you will bake the chicken. Without them, you can't make this recipe.

    Some people I know are worried that you need a big kitchen and an oven just to make this dish, but that is not true at all. I am living in a studio unit, and it is possible to cook this amazing pan dish. I don't even have a big oven and my kitchen is small. But, as long you have all the ingredients you need, then this will not be a problem.

    What is the step of cooking this dish?

    Cooking this dish is quite are easy. First of all, you will have to clean the chicken with lemon. This will help remove the smell. After that, put the chicken into the baking tray along with onions. Add salt, black pepper, and olive oil into the tray, and mix it well. Turn on the fire, and let the chicken cook for 30 minutes. Add ½ cup of water into the tray so the chicken can be boiled. 15 minutes before done cooking, add potatoes in the tray and cook for the remaining 15 to 20 minutes. When the chicken is already cooked, add 1 tablespoon of tomato paste and stir it slowly. Cook for an additional 5 minutes for the tomato paste to be fully dissolved into the sauce.

    Preheat the oven in 220 C. Transfer the chicken tray into the top of the rack. Let it bake for 5 to 10 minutes or until you see a beautiful brown texture of the potato and chicken. And then serve it with rice or pita bread and you are done.

    Ingredients
      

    • 8 pieces Chicken Leg and Thigh
    • 1 Large Chopped Onion
    • 2 Medium Chopped Potatoes
    • ½ cup olive oil
    • 2 teaspoon black pepper
    • 2 teaspoon salt
    • 1 tablespoon tomato paste
    • 1 cup water

    Instructions
     

    • Add the chicken and a chopped onion into the tray. Add salt, black pepper, and olive oil into tray. Mix it well.
    • Turn on the heat. Cover the tray with foil and cook the chicken for 30 to 35 minutes.
    • After 15 minutes, put the chopped potatoes into the tray. Continue cooking for remaining 15 to 20 minutes.
    • Once the chicken is almost cooked, add tomato paste and cook for another 5 minutes.
    • Preheat the oven in 220 C. Transfer the chicken tray in to the top of the rack. Let it bake for 5 to 10 minutes or until you see a beautiful brown texture of the potato and chicken. Serve with rice or pita bread.

  • If you don’t have tomato paste, you can use tomato sauce
