To me, Thai food is one of the best Asian cuisines since they are rich in herbs & spices. When I was in an authentic Thai restaurant in Cebu City, I have eaten a delicious Thai garlic pepper chicken called Pad Kra Tiem. Because I love it so much, this is what inspired me to make my version of this recipe.
The Pad Kra tiem recipe I made has a rich garlicky & peppery flavor with a combination of umami & sweet flavor from the soy sauce & oyster sauce. Because of its strong flavor, this must be eaten with rice which I like to serve it with white jasmine rice, or other fried rice like my homemade shanghai fried rice or chao fan rice. It is surprisingly a simple and straight-forward recipe which will only take less than 15 minutes to cook this.
Recipe Ingredient
Here are the ingredients you need to make a Thai Garlic Pepper Chicken recipe:
- Chicken: I am using a boneless chicken breast which I chop into 2 inches long.
- Garlic: The garlic is one of the most important ingredients since this is what gives a strong garlicky flavor to my chicken.
- Condiments: To add umami & sweet flavors, I use sweet soy sauce, oyster sauce, and dark soy sauce. These 3 seasoning sauces will enhance the flavor of my chicken.
- Cornstarch: I coated the chicken with the cornstarch during the marination process which will help maintain its moisture while at the same time developing a crispy exterior when cooked.
- Black Pepper: Along with garlic, black pepper is important since it gives a peppery flavor to my chicken.
- Vegetable Oil: This cooking oil is needed to saute the garlic and stir-fry the chicken. I prefer to use canola oil since it's one of the healthiest oils to use.
SUBSTITUTION SUGGESTION: You can use white pepper instead of black pepper. Also, if you don't have cornstarch, you can substitute it with potato starch or all-purpose flour.
Step by Step Instruction
Here is the instruction on how to cook this delicious yet simple recipe of Pad Kra Tiem which will take only less than 12-15 minutes.
- To marinate the chicken, I combined the chopped chicken breast with cornstarch, soy sauce, and black pepper. Stir to mix gently and then set it aside.
- To start cooking, I add vegetable canola oil to the pan on medium-low heat. Once the oil becomes hot, I add the chopped garlic and stir gently till it turns light brown. Get a teaspoon of this fried garlic and set it aside.
- Next, I added the marinated chopped boneless chicken breast which I gave a quick stir before adding the black pepper. Mix to stir gently.
- Lastly, I added the oyster sauce and the sweet soy sauce which I gently mix them with the chicken. I let it cook for a few minutes before turning off the heat. Serve it on a plate and top it with the remaining fried garlic for garnish.
What to eat Pad Kratiem with?
This Thai Garlic Pepper Chicken is best eaten with white jasmine rice or any fried rice like chao fan. Because this chicken recipe is so moist, you will not need any sauce to satisfy it.
Additionally, you can pair it with other Thai dishes such as my homemade Pad Thai and Thai Fish Green Curry. Traditionally, when we eat Thai food, we like to serve it with many side dishes or other main dishes which we combine with each serving on our plate with rice.
What to do with the left over chicken?
When I have leftover chicken, I can use it in many ways to create delicious variations, which is convenient since I can save on costs without needing to buy additional chicken at the grocery store
Because the chicken is so flavorful, I like to use it in my Filipino Chicken Pancit Noodle since the ingredients are almost the same. Additionally, I use the leftover chicken to mix it into my Chop Suey recipe during the cooking process. This really saves me time without having to make something new.
Lastly, you can use this leftover Thai garlic pepper chicken to make a new fried rice or mix it into a salad if you are on a diet.

You can store this delicious Pad Kra Tiem in a air-tight container for up to 5 days in the fridge. If you want to last it longer, you can keep it in the freezer which will last for up to 2 month.
2. Can I use different protein or meat with the same ingredients?
Of course. You can use beef, pork, or even tofu & soy meat if you prefer vegetarian.
3. Can I make this recipe spicy?
Yes, you can add a teaspoon of red chili flakes to make this garlic pepper chicken spicy.

- 1.5 tablespoons of sweet soy sauce

Instructions

- Lastly, add the oyster sauce and sweet soy sauce, gently mixing them with the chicken. Let it cook for a few minutes before turning off the heat.
- Serve it on a plate and top it with the remaining fried garlic for garnish. This is best to eat with white rice or any fried rice.
Notes
- SUBSTITUTION SUGGESTION: You can use potato starch or all purpose flour instead of cornstarch. You can also substitute black pepper with white pepper.
- To make it spicy, you can add 1 teaspoon of red chili flakes
